You start by avoiding mattresses made with memory foam.
Most memory foam mattresses off gas toxic chemicals.
All memory foams sleep hot and wear out quickly.
A 3 year old child has to have firm support for growing bones.
A firm, individually pocketed coil mattress is where to start.

At about the age of 12, It’s typical for girls to want a makeover for their bedrooms, which usually includes a larger mattress.
So, if you have space in her bedroom, I suggest buying a full or queen size now, which will save you from having to replace the mattress then.

Also recommended is a waterproof mattress protector, which prevents perspiration from seeping into the upholstery materials.
Keeping your mattress clean and dry will prevent odors and enhance longevity.
