The Wolf Brolynn 12” Plush mattress sounds very comfortable.
But I'd like to keep the mattresses dressed and worry that the 12" mattress will be too thick.
The bed has metal slats that require a bunkie board. How would that work?
The bottom mattress would have to be the same way...a bunkie board and then the mattress.

Welcome back.
With metal slats for support, a Bunkie Board will be necessary, which will take up an inch of available height.
A 10” mattress makes the most sense, allowing room for linens.
The Wolf Jessica Mattress in Luxury Firm will be the most comfortable choice of the 10”

Not necessarily, but definitely the bottom mattress.
If it’s a pop-up trundle, using the same 10” Jessica mattress on top will make them even.
If that’s not important to you, then the 12” Plush Brolynn Two Sided Mattress will provide the most comfort.
