The difference between Dunlop and Talalay latexes is a couple of extra steps in the Talalay process, which makes it more supple than the Dunlop.
Because the Dunlop is more dense, it's better for support than surface comfort. Like-wise, the Talalay latex is better for surface comfort than support.
Even though latex is the best of the foams, it does not provide the push back support for the spine that the coils provide.
The Natura mattress I recommended for you provides that push back support, as does the Naturepedic.
The Natura uses Talalay Latex for the upholstery layers, which is generally more comfortable.
The wool is under the quilted cover and under your linens...and not against your skin, as it would be in a sweater.
Another reason for recommending the Natura is the value. A whole lot of mattress for less than the brands you mentioned.
